Pencil Wafer Cookies

Everyone needs a great back-to-school snack. Try these adorable wafer pencil cookies!

Ingredients

• 1 pkg. vanilla or lemon wafer cookies
• 11 oz. white chocolate chips
• 10 oz. mini chocolate chips
• 1/8 tsp. pink food coloring

Directions:

Over a double boiler, melt white chocolate chips. Once melted completely, split into two bowls. Color one bowl of white chocolate pink using the pink food dye.

Cut each wafer into a point using a sharp knife.

Dip the dull side of the wafer into the pink chocolate about 1/2 inch up, then flip and dip the pointed side into the white chocolate. Set on wax paper to set and add the mini chocolate tip to the point to resemble the led of a pencil. Repeat until all wafer cookies are used and enjoy!
