Prime Rib is the perfect holiday meal to impress all of your guests with relatively low effort. One of the reasons Prime Rib is such a great choice for feeding a large group of people is the diversity in the meat itself. For those that love rare bites, the center is the optimal place to serve from. However, if you have guests that prefer their meat well done, the exterior of the rib will be cooked to their satisfaction as well.
As a general rule of thumb, one serving is about 6-8 ounces. Of course, you know your household best, and know who will eat double that amount. Typically, a 5–7-pound prime rib will feed a family of 6.
Begin by preheating your oven to 450 degrees Fahrenheit. This high temperature will only be used to sear the rib at first.
Combine onion powder, rosemary, sea salt, fresh peppercorn, fresh minced garlic, olive oil, melted butter, and black pepper together to form a paste. Using a large mixing bowl, generously spread the paste over the entire rib. Then, put the rib in your favorite cooking dish and place it in the prepared oven to sear. This should take about 10-15 minutes, but more important than time is your observation. Watch the rib and wait for it to reach the desired coloring on the outside, then remove it from the oven and decrease the temperature to 200 degrees. Searing the outside locks in the juices and creates the coating and coloration you want.
Once the oven has cooled, place your rib back inside (uncovered) and allow it to cook long and slow. This 3-pound rib took about two hours-but is much smaller than a prime rib you would typically cook for your family. Use a meat thermometer to monitor the internal temperature at the center of the prime rib and pull it out once it reaches your desired doneness. A key for this is:
125 degrees: Rare
135-145 degrees: Medium
145-155: Well done
After removing the rib from the oven, allow it to sit and rest for 20 minutes before serving. The meat will continue to cook slightly at room temperature. Serve with steamed vegetables, fruits, and fresh warm rolls.
